Bruce Willis ended up replacing him at the last minute.

During the fight scene Meryl Streep got too close to Goldie
Hawn and actually hit her in the face so hard that she got a permanent
scar.

Perhaps in tribute to Robert Zemeckis' earlier film, the
date that Helen drinks the potion is October 26, 1985 which is the date
of present time in Back To The Future.
